100% Pinot Noir,  Dosage extra brut: 3g/l

This rare bottling from a small plot called Les Beurys in Grand Cru Ambonay where the average vine age is 40 years old. Like all Eric's around 60 wines from 6 hectares of vineyards, this one is also aged separately. Normally, Eric believes that by blending the differently prepared wines, he achieves greater complexity; here he consciously relies on one plot and one vintage. No malolactic fermentation, no transition to industrial cold, no filtration. The role of the winemaker is limited to maintaining nature’s original harmony. This champagne shows all the substance contained in its terroir.

Here you find extremely precise and focused fruit with a sharp mineral edge. Aged in small oak, there is a layered depth that is absolutely incredible. Red fruit, baked bread, floral notes and wild herbal honey carry through on the long, sensual finish. Cellar worthy, if you can keep your hands off it. A Blanc de Noirs at the highest level.

Tasting Notes

Ripe wild raspberry and elegant citrus notes a bit of sour drops. Medium to full body with fine bubbles and a long finish.

Food Suggestions
Veal and white asparagus.
