Vintage 2020 Blend of 50% Chardonnay and 50% Meunier
 
Harvest: 2020
Chardonnay built during 6 month in oak
Fermentation: 100% malolactic
Aging: 4 years
Dosage: Extra-Brut 5g/l
 
Assemblage Élégant offers a pleasant fresh and slightly acidulated scent, mixing citrus and vanilla. There are fine, fine bubbles and a beautiful slightly golden dress, with a touch of green. You discover how the Chardonnay takes its place and brings a pleasant acidity, but nevertheless reasonable. This acidity, discreet, is partly due to malolactic fermentation, but also to the aging in six-month barrels. The Elegant Blend has a soft and creamy texture, which means that it could be enjoyed with a salmon pasta dish in a light creamy sauce or with a salad with edamame beans and maybe fresh fruits like peaches.
