This rare bottling made from a single plot of 50 year old vines Les Genettes in Grand Cru Ambonnay and aged in small oak barrels without malolactic fermentation to concentrate the richness and penetration. Like all Eric's around 60 wines from 6 hectares of vineyards, this one is also aged separately. Normally, Eric believes that by blending the differently prepared wines, he achieves greater complexity; here he consciously relies on one plot and one vintage. This champagne shows all the substance contained in its terroir. The role of the winemaker is limited to maintaining nature’s original harmony.

Explosive red fruit, gorgeously warm and rich with nutty, buttery crust with syrup poached apples and pears. This champagne is precise and mineral. Light, fresh and mineral, it reflects the sensuality of the terroir. A Blanc de Noirs at the highest level.

Tasting Notes: 

The nose and mouth combined harmoniously on fragrances and flavours of red fruits like wild strawberry, blueberry or redcurrant, while expressing spices like grey or white pepper  with a remarkable lingering finish on wooden notes enhanced by a touch of vanilla. The colour is a bright gold.

Food Suggestions:

A great moment if served as an aperitif with sushi, maki or sashimi. Would also go well with lime-flavoured caviar canapés or Grande Champagne Premier Cru cognac-flavoured foie gras. Would fit well with grilled fish.
