Lahert’s ancestors already cultivated this wine many centuries ago. Out of existing grape varieties they found in their old plots Lahert recreated a former plot in order to produce a wine of Champagne with the same taste as 250 years ago again…  

Cultural practices : vine growing with the respect of nature.

Assemblage : Terroir of Chavot. Chalky-clay soils with the presence of pebbles. The parcel was planted by Thierry Laherte in 2003.

10% Fromenteau, 8% Arbanne, 14% Pinot Noir, 18% Chardonnay, 17% Pinot Blanc, 18% Pinot Meunier, 15% Petit Meslier  

Vinification :  picked up by hand when fully ripen, then traditional pressing, Natural alcoholic fermentation in barrels, Wine maturation during 6 months with regular stirring of the lees, No malolactic fermentation, Blending of several years, Solera : 60% of wines of the years are added to 40% of reserve wines (since 2005).

Dosage :  Extra-Brut, disgorgment by hand.

Tasting notes (Stephen Tanzer) : Powerful scents of exotic fruits, brioche, smoky minerals and singed orange. Deep and rich, precise on the palate, offering palate-coating orchard and pit fruit flavors and sneaky minerality. Rich and energetic at the same time. 93/100

 

Tasting Notes (Antonio Galloni) : Intensely perfumed and bright, Les 7 showcases striking interplay of aromas, flavors and textures. Citrus, white orchard fruit and sweet, perfumed overtones all develop in the glass. 92/ 00
