Sève Blanc de Noirs was not only Olivier Horiot's first champagne, but it's all about the number 1 in this champagne. According to the principle "1 variety, 1 plot, 1 year", only Pinot Noir grapes are used, which originate exclusively from the plot "En Barmont" in Les Riceys and only from the 2017 vintage. The only thing kept at zero is the dosage, as in all wines from Olivier Horiot.
"En Barmont" is a southeast-facing slope and consists mainly of red clay on hard limestone, resulting in a very fresh Blanc de Noirs loaded with minerality. The alcoholic fermentation took place in oak barrels, and the champagne was then aged on the lees for over 5 years.
Small annual production of approx. 2'000 bottles and 90 magnums (exact details on the backlabel of each bottle).
