100 % Pinot Noir, extra-brut - Single vineyard vintage Blanc de Noirs

Les Rouges Maisons is a single vineyard in Chavot, with fairly deep soil and with an important presence of clay, flints and schists. Chalky subsoils. The plots were planted in 1983.

This cuvée is the result of a long work and attention in the vines and as well in the winery : waiting for the grapes to ripen, slow alcohol fermentation in barrels, and aging for 18 months on fine lees in barrels before bottling… all this in order to reveal the richness and complexity of Pinot Noir… with finesse!

Vinification :

• Picked up by hand when fully ripen
• Pressed with a traditional round wooden single four-tonne press
• Alcoholic fermentation in barrels
• Malolactic fermentation made
• Ageing on lees during 18 months
• Dosage extra brut : 2g/l
• Disgorgment by hand

Small production of less than 2'000 bottles per vintage.
