Seven grape varieties, one plot, solera method. Olivier Horiot's Soléra is the result of blending all seven grape varieties allowed to be grown in Champagne : Pinot Noir, Chardonnay, Meunier, Pinot Blanc, Arbane, Fromenteau (Pinot Gris), Petit Meslier coming from one single plot : Prémalin-la Brosse. The terroir is characterized by grey marl on Kimmeridgian hard limestone.
Vinified for 1 year in barrels and then aged according to the perpetual solera method.
Minimal sulfites and no final dosage: 0g/l, brut nature.
Small annual production of approx. 2'600 bottles and 120 magnums (exact details on the backlabel of each bottle).
