Assemblage of Pinot Noir and Chardonnay from the best parcels of the Grand Cru location Ambonnay with south-south-east orientation, loamy limestone soils; Conventional cultivation, manual harvesting in small boxes of sun-picked grape material, spontaneous and thermoregulated fermentation in stainless steel tanks, aging in oak barrels, bottling without filtration process, bottle fermentation and storage on lees of 106 months! This Millésime was disgorged in May 2015. Light dosage of only 2g / l, extra-brut.
Expressing great finesse and excellent balance, this cuvée is truly a "grand cru" in the true sense of the word! A great drinking pleasure with nuances of fruit jam and pure minerals. An approach of tannin in the mouth, enhanced with rich bubbles and a good balance of multiple flavours.
