60% Pinot Meunier, 30% Chardonnay, 10% Pinot Noir, of which 40% reserve wines from previous years stored in barrels.

This is a subtle blend of three grape varieties and the diversity of Lahert's terroirs : a fine and complex blending with fruityness and delicacy. 

Pinot Meunier is dominant with 60%, unusual for an NV cuvée and grows in the Vallée de la Marne, the Chardonnay origins from Chavot. A small shot of Pinot Noir, grown on clay marl, with inclusions of flint and chalk, is added. The subsoil is pure chalk rock. The wines are aged in small and large oak barrels, and malo only takes place partially. When the fermentation of the Meunier wines is complete, Aurelien withdraws the previous year's Chardonnays from the barrel and adds the Meunier to the barrel on the Chardonnay yeast to make the wines denser and more vinous. The base wines remain on the fine yeast for 6 months before bottle fermentation.

Dosage : Extra-brut, disgorgment by hand.

Tasting Notes (Antonio Galloni) :The NV Extra Brut Ultradition is a gorgeous wine at its level, and also a terrific introduction to the Laherte Champagnes. Translucent and energetic, the Ultradition has a lot to offer. Pear, almond and dried flowers meld together as this creamy, ample Champagne shows off its distinctive personality. The flavors are brilliant and chiseled throughout. What a gorgeous wine this is. 93/100
